Sweetpotato burgers (vegan + gf)
Recipe type: burgers
  • 1 sweet potato
  • 2 tomatoes
  • ½ Aubergine
  • ½ zucchini
  • 1 carrot
  • 2 mushrooms
  • 2 handful arugula salad
  • 1 avocado
  • some lemon juice
  • ½ glove of garlic (opt.)
  • salt, pepper and chilli flakes
  • some olive oil
  1. Preheat your oven (170°C). Peel the sweet potato and cut it into about 1cm thick slices. Take the other vegetables (tomatoes to mushrooms) and make small slices as well. Put everything on a baking tray and mix it with olive oil, salt, pepper and some chili flakes. Put it into the oven for about 10-15 minutes.
  2. Meanwhile you can make the guacamole out of one avocado, salt +pepper, ½ glove of garlic and some lemon juice.
  3. Once the vegetables are soft you can start to layer your burgers. Don't forget the salad!
